Recipe of the Week: Vegetarian Stuffed Acorn Squash

Try this recipe using Acorn squash (offered at P.O.W.W.O.W. markets this past weekend), roasted in halves topped with quinoa as a main dish for vegetarian and gluten-free eaters.  Beautiful dish once completed to present also.  The winter squash contains vitamin A, B-6 and C, magnesium, potassium, fiber and antioxidants.
