Roast zucchinis and add arugula, goat cheese and almonds to add a different flavor to this recipe.  Zucchinis or Italian Squash is high in vitamin c, carbohydrates, protein, fiber and other nutrients.  This summer squash is known to help with reducing weight, enhance vision and prevent diseases that occur as a result of vitamin c deficiency.
