Recipe of the Week: Healthy Zucchini Tots

Who can ever turn down tots?  Try the simple to make, nutritious and delicious recipe.  The main variety is being offered at this Saturday’s P.O.W.W.O.W. market.  Zucchini contains zero fat, and is high in water and fiber.  It also contains significant amounts of vitamins B6, riboflavin, folate, C and K and minerals, like potassium and manganese.  The summer squash also contains antioxidant and anti-inflammatory phytonutrients.
