Recipe of the Week: Parmesan Butternut Squash Fries

Any french fry lovers out there?  Try this delicious but healthy alternative recipe using butternut squash.  Butternuts are a good source of vitamin B-6 and E, thiamin, niacin, pantothenic acid and manganese.  A cup of cubed butternut squash provides more potassium than a banana.
