Have your children involved and make it a family affair to prepare a delicious vegetarian meal using varieties you shopped for at a P.O.W.W.O.W. market.  Bell peppers are rich in vitamin C and antioxidants and summer squash are also high in vitamin C plus A, B6, folate, magnesium, fiber, riboflavin, phosphorus and potassium.
